Ingredients

Scale
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can corn, drained
  • 2 tablespoons tomato paste
  • 1 ½ cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt & pepper to taste
  • Optional toppings: sour cream, chopped cilantro, diced red onion, shredded cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until fragrant.
  2. Add ground turkey and cook until browned, breaking it apart with a spoon.
  3. Stir in sweet potatoes, black beans, corn, diced tomatoes, and tomato paste.
  4. Season with chili powder, cumin, smoked paprika, salt, and pepper. Stir well to combine all ingredients.
  5. Pour in chicken broth and bring mixture to a boil. Reduce heat and simmer uncovered for 25–30 minutes, until sweet potatoes are fork-tender.
  6. Serve hot with optional toppings such as sour cream, chopped cilantro, diced red onion, or shredded cheese.

Notes

  • Make it vegetarian by swapping ground turkey with plant-based meat or extra beans.
  • Use vegetable broth instead of chicken broth for a vegetarian version.
  • Great for meal prep – flavors deepen after a day in the fridge.
  • Adjust spice levels to your taste by increasing or decreasing chili powder.
