A simple and delicious icebox cookie recipe with toffee bits and a white chocolate drizzle, perfect for holidays or easy baking.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup toffee bits (or crushed toffee candy)
  • 1/2 cup chopped pecans (optional)
  • 1/2 cup white chocolate chips, melted

Instructions

  1. Beat butter, granulated sugar, and brown sugar until light and fluffy. Add egg and vanilla, mixing until smooth.
  2. Stir in flour, baking soda, and salt until combined. Divide dough, roll into two logs, wrap in plastic, and chill for at least 2 hours.
  3. Preheat oven to 350°F. Slice chilled dough into 1/2-inch rounds and place on a lined baking sheet. Bake 10–12 minutes until edges are golden.
  4. While warm, press a mix of toffee bits and pecans onto each cookie.
  5. Drizzle melted white chocolate across the tops and let cool.

Notes

  • Chilling the dough ensures easier slicing.
  • For extra crunch, toast the pecans before adding.
  • Store in an airtight container for up to 5 days.
