A fresh and vibrant summer side dish featuring yellow squash, zucchini, and sweet corn, cooked to perfection with garlic and onions.

Ingredients

  • 2 medium yellow squash, sliced
  • 1 zucchini (optional), diced
  • 1 cup sweet corn (fresh, canned, or frozen)
  • ½ small onion, sliced
  • 1 tbsp olive oil or butter
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped
  • ¼ tsp paprika (optional)

Instructions

  1. In a skillet over medium heat, add olive oil and sauté onions and garlic until fragrant.
  2. Add squash and zucchini. Cook 5–6 minutes until tender-crisp.
  3. Stir in the corn and season with salt, pepper, and paprika. Cook another 2–3 minutes.
  4. Remove from heat, sprinkle with fresh parsley, and serve warm.
  5. Pairs perfectly with grilled meats, fish, or as a light lunch.

Notes

  • For extra flavor, use fresh sweet corn when in season.
  • Adjust seasoning to your preference.
