- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 1 tbsp sugar
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/4 cup sour cream
- 2 tbsp all-purpose flour
- 6 Golden Oreos
- 4 Strawberry Shortcake Crunch ice cream bars (or 1/3 cup freeze-dried strawberries + vanilla cookies)
- 2 tbsp butter, melted
- 1/2 cup strawberry jam or preserves
- Mix graham crumbs, melted butter, and sugar until combined. Press into a mini cupcake pan lined with paper liners.
- Beat cream cheese, sugar, vanilla, eggs, sour cream, and flour until smooth.
- Spoon cheesecake batter over crusts. Add 1/2 tsp strawberry jam into the center of each.
- Bake at 325°F for 18–20 minutes or until centers are just set. Cool completely and chill for 2 hours.
- Pulse Oreos and strawberry bars in a food processor. Mix with melted butter and sprinkle on top.
