- 1/2 lb ribeye or sirloin steak, cut into bite-sized cubes
- 1/2 lb large shrimp, peeled and deveined
- 1 tbsp Creole seasoning (or Cajun if you prefer spice)
- 1 tbsp olive oil
- 1/2 red bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1/2 small onion, sliced
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1 tbsp butter
- Fresh parsley, chopped (optional for garnish)
- In a hot skillet with olive oil, sear steak cubes for 2-3 minutes until browned. Toss in shrimp with Creole seasoning and cook until just pink.
- In the same pan, sauté onions and bell peppers until soft and slightly charred.
- On one half of a tortilla, layer mozzarella, steak, shrimp, peppers, and cheddar cheese. Fold over.
- Melt butter in a skillet and cook the folded quesadilla until golden brown on both sides and cheese is fully melted.
- Slice into wedges and sprinkle with chopped parsley. Serve with sour cream, salsa, or your favorite dip.
