A wholesome Mediterranean-inspired dish featuring bell peppers stuffed with quinoa, spinach, and feta cheese. Perfect for a healthy weeknight dinner.

Ingredients

  • 4 large bell peppers (red, yellow, or green)
  • 1 cup cooked quinoa
  • 2 cups fresh spinach (lightly sautéed)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt & black pepper to taste
  • Optional: pinch of crushed red pepper for heat

Instructions

  1. Preheat oven to 375°F. Slice the tops off bell peppers and remove seeds. Drizzle with olive oil and roast for 10 minutes.
  2. In a skillet, heat olive oil and sauté garlic until fragrant. Add spinach and cook until wilted.
  3. In a bowl, mix cooked quinoa, sautéed spinach, chopped sun-dried tomatoes, and crumbled feta. Season with salt, pepper, and optional chili flakes.
  4. Fill roasted peppers with the quinoa mixture. Return to oven and bake for 15–20 minutes.
  5. Garnish with extra feta and sun-dried tomatoes before serving.

Notes

  • Use any color bell pepper for variety.
  • Add extra veggies like zucchini or mushrooms for more flavor.
  • Store leftovers in an airtight container for up to 3 days.
