  • 1/2 lb spicy chorizo (casings removed)
  • 1 cup crushed tortilla chips
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped red onion
  • 2 cloves garlic (minced)
  • 1 large egg
  • 1 tbsp taco seasoning
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 cup fresh cilantro (chopped)
  • 1 small jalapeño (finely diced)
  • Extra cheddar, diced tomatoes, and chopped cilantro (for topping)
  • Lime wedges (for serving)

Instructions

  1. In a large bowl, combine ground beef, chorizo, egg, garlic, onion, crushed tortilla chips, spices, and cheese.
  2. Roll into golf ball-sized meatballs.
  3. Bake at 400°F (200°C) for 20–25 minutes on a lined sheet until browned.
  4. Sprinkle hot meatballs with extra cheddar, diced tomatoes, and fresh cilantro.
  5. Serve over crushed tortilla chips or solo with lime wedges.
