4 large russet potatoes
1 lb ground turkey
1/2 cup chopped onion
1/2 cup chopped green bell pepper
2 garlic cloves, minced
1/2 cup ketchup
1 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp chili powder
1/2 tsp smoked paprika
Salt & pepper to taste
1 cup shredded cheddar cheese
1/4 cup sour cream (optional)
1/4 cup chopped green onions (for topping)

Instructions
Preheat oven to 400°F. Rub potatoes with olive oil and a pinch of salt, then bake for 45–60 minutes until tender.
In a skillet, sauté onion, bell pepper, and garlic until soft. Add ground turkey and cook until browned.
Stir in ketchup, tomato paste, Worcestershire sauce, chili powder, paprika, salt, and pepper. Simmer for 5–7 minutes until thickened.
Slice open each baked potato and fluff the insides. Spoon the turkey Sloppy Joe filling over the potatoes.
Top with shredded cheddar cheese, a dollop of sour cream (if using), and chopped green onions. Serve hot.
