A quick and flavorful shrimp quesadilla with melty cheese, perfect for a weeknight dinner.

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • Salt & pepper to taste
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 2 tbsp chopped cilantro (optional)
  • 1 1/2 cups shredded mozzarella or Monterey Jack cheese
  • 4 large flour tortillas
  • Butter or oil for cooking
  • Lime wedges, for serving

Instructions

  1. Season shrimp with olive oil, paprika, garlic powder, chili powder, salt, and pepper. Sauté in a skillet for 3–4 minutes until pink.
  2. In the same skillet, cook red pepper and onion for 2–3 minutes until softened.
  3. Assemble by placing cheese, shrimp, sautéed veggies, and more cheese on half of each tortilla. Fold and press lightly.
  4. Cook each folded tortilla in a buttered skillet for 2–3 minutes per side until golden and melty.
  5. Slice into wedges, sprinkle with cilantro, and serve with lime wedges.

Notes

  • Adjust spice levels to your preference.
  • Use Monterey Jack for extra creaminess.
  • Serve with sour cream or guacamole if desired.
