- 12 large cremini or white mushrooms, stems removed
- 1/2 cup cooked shrimp, chopped (plus 6 whole shrimp for topping)
- 1/2 cup lump crab meat
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/4 cup frozen spinach, thawed and squeezed dry
- 2 cloves garlic, minced
- 1/4 cup breadcrumbs (plus extra for topping)
- 1 tbsp olive oil
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
- Optional: pinch of Old Bay seasoning
- Prep the Mushrooms: Clean mushroom caps and lightly oil them. Set on a baking sheet.
- Mix the Filling: Combine chopped shrimp, crab, cream cheese, Parmesan, spinach, garlic, breadcrumbs, and seasoning in a bowl.
- Stuff & Top: Fill each mushroom with the seafood mixture and press a whole shrimp on top. Sprinkle with extra breadcrumbs.
