  • 4 corn dogs (store-bought or homemade)
  • ½ cup cooked shrimp, chopped
  • ½ cup lump crab meat
  • ½ cup shredded cheddar-jack cheese
  • 2 tbsp sour cream or crema
  • 1 tbsp mayo
  • 1 tbsp red onion, finely diced
  • 1 tbsp fresh chives or green onions, chopped
  • ¼ tsp smoked paprika
  • Salt & pepper to taste
  • Optional: hot sauce
  • Optional: crushed tortilla chips
  • Optional: extra cheese for topping

Instructions

  1. Bake or air fry the corn dogs until golden and crispy.
  2. In a bowl, mix the chopped shrimp, crab meat, sour cream, mayo, red onion, smoked paprika, salt, and pepper.
  3. Slice the corn dogs down the center lengthwise without cutting all the way through to create a ‘boat.’
  4. Fill each corn dog with the seafood mixture and sprinkle shredded cheese on top.
  5. Broil or bake the loaded corn dogs until the cheese is melted and golden.
