This Sausage Tortellini Pasta is a hearty, one-pan Italian comfort food dish made with cheesy tortellini, savory Italian sausage, tomatoes, fresh basil, and Parmesan cheese. Ready in just 30 minutes, it’s perfect for a quick and delicious weeknight dinner.

Ingredients

Scale
  • 1 lb cheese tortellini (fresh or frozen)
  • 1 lb Italian sausage (sweet or spicy), casings removed
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • ½ cup tomato sauce or crushed tomatoes
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
  • 1 cup fresh basil leaves
  • ½ cup grated Parmesan cheese
  • Optional: red pepper flakes for extra kick

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sausage and cook, breaking it into chunks, until browned and crispy.
  2. Add minced garlic and halved cherry tomatoes. Cook until tomatoes begin to burst and garlic is fragrant.
  3. Stir in tomato sauce and Italian seasoning. Simmer for about 5 minutes to let the flavors meld and the sauce thicken.
  4. While sauce simmers, cook tortellini according to package instructions. Drain and add to the skillet with the sausage mixture.
  5. Gently stir the tortellini into the sauce until well coated. Add fresh basil leaves and sprinkle with Parmesan cheese. Season with salt, black pepper, and optional red pepper flakes. Serve hot.

Notes

  • Use spicy Italian sausage for an extra kick.
  • Fresh tortellini cooks faster than frozen; adjust cook time accordingly.
  • Add spinach or mushrooms for extra veggies.
  • Leftovers can be refrigerated for up to 3 days.
