- 4 ears of fresh corn (cut into rounds or kernels sliced off)
- 12 oz smoked sausage, sliced into rounds
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small onion, diced
- 2 tbsp unsalted butter
- 1/4 cup heavy cream (optional for creamy version)
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika
- Salt & black pepper to taste
- 2 tbsp chopped parsley (for garnish)
- In a large skillet over medium heat, cook sausage until browned.
- Add butter to the pan, then toss in onion, bell peppers, and garlic. Sauté until softened.
