Rotel Sausage Balls are a cheesy, spicy, and savory appetizer made with breakfast sausage, cream cheese, Rotel, cheddar cheese, and Bisquick. Perfect for parties, game day, or as a make-ahead snack, these bite-sized treats are crispy on the outside and creamy on the inside.

Ingredients

Scale
  • 1 lb breakfast sausage (mild or hot)
  • 1 cup shredded cheddar cheese
  • 8 oz cream cheese (softened)
  • 1 can Rotel (drained well)
  • 1 1/2 cups Bisquick or baking mix
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Pinch of black pepper

Instructions

  1. In a large bowl, combine sausage, cream cheese, drained Rotel, cheddar, Bisquick, garlic powder, onion powder, and black pepper. Mix well with your hands until thoroughly combined.
  2. Scoop the mixture and roll into 1-inch balls. Place on a lined baking sheet.
  3. Bake at 375°F (190°C) for 20–25 minutes or until golden brown and cooked through.
  4. Let the sausage balls cool for 2–3 minutes before serving.
  5. Serve hot with optional dips like ranch, spicy mayo, or chipotle sauce.

Notes

  • Ensure Rotel is well-drained to prevent sogginess.
  • Use gloves when mixing by hand for easier cleanup.
  • Can be made ahead and frozen before or after baking.
  • Reheat in the oven for best texture.
