Sweet and nutty bite-sized appetizer or dessert with creamy ricotta, pistachios, and honey.

Ingredients

  • 1 cup whole milk ricotta cheese
  • 1 egg yolk
  • 1 tbsp flour (all-purpose or almond flour)
  • 1 tbsp sugar (optional for sweeter flavor)
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon zest (optional but fresh!)
  • 2 tbsp crushed pistachios
  • 2 tbsp honey (plus more for drizzling)
  • 1 tbsp butter or oil (for browning)

Instructions

  1. Mix ricotta, egg yolk, flour, vanilla, lemon zest, and sugar (if using) until smooth and thick.
  2. Scoop into small rounds and chill in the freezer for 10–15 minutes.
  3. Heat butter or oil in a pan. Sear bites until golden brown, 2–3 minutes per side.
  4. Top with pistachios and drizzle with honey while still warm.
  5. Serve warm or chilled.

Notes

  • Best served fresh for maximum flavor.
  • Can be prepared ahead and reheated.
  • Substitute almond flour for a gluten-free option.
