  • 2 large cucumbers, sliced into thick rounds
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 packet ranch seasoning mix
  • 1 tbsp olive oil or melted butter
  • 1 tbsp fresh parsley or dill, finely chopped
  • Optional: ranch or sour cream for dipping

Instructions

  1. Pat cucumber slices dry with paper towels.
  2. Mix cheddar, Parmesan, ranch seasoning, and herbs in a bowl.
  3. Place cucumber slices on a parchment-lined baking sheet, brush with oil, and top with cheese mixture.
  4. Bake at 400°F (205°C) for 18–22 minutes until golden and crispy.
  5. Let cool for 5 minutes before serving.
