- 1 box yellow cake mix (or homemade vanilla mix)
- 3 large eggs
- ½ cup vegetable oil
- 1 cup water or milk
- 1 tsp vanilla extract
- 1 tsp cinnamon (optional)
- 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- 2 tsp vanilla extract
- 2–4 tbsp milk or cream
- Pinch of salt
- Fall-colored sprinkles or rainbow sprinkles
- Cinnamon sugar (optional)
- Combine cake mix, eggs, oil, milk (or water), vanilla, and cinnamon. Mix until smooth.
- Line cupcake pan and fill each ¾ full. Bake at 350°F (175°C) for 18–20 minutes. Let cool.
- Beat butter until fluffy, then gradually mix in powdered sugar, vanilla, salt, and milk.
- Arrange cupcakes close together on a tray. Pipe frosting over the tops in a continuous swirl.
- Sprinkle with cinnamon sugar or fall sprinkles.
