Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup creamy peanut butter
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup guava jam or guava paste, softened
  • 1/4 cup chopped peanuts
  • 2 tablespoons brown sugar
  • 1 tablespoon melted butter

Instructions

  1. Whisk peanut butter, oil, sugars, eggs, milk, and vanilla until smooth.
  2. Mix flour, baking powder, and salt in a separate bowl. Gradually fold into wet mixture.
  3. Fill lined muffin tins 3/4 full. Add guava jam and swirl with a toothpick.
  4. Mix chopped peanuts, brown sugar, and melted butter. Sprinkle over muffins.
  5. Bake at 375°F for 18–22 minutes until golden brown.

Notes
