Ingredients

Scale
  • Crust:
    • 1 cup crushed graham crackers
    • 2 tbsp brown sugar
    • 4 tbsp melted butter
  • Filling:
    • 8 oz cream cheese, softened
    • 1/2 cup creamy peanut butter
    • 1/4 cup powdered sugar
    • 1 tsp vanilla extract
    • 1/4 cup heavy cream (cold)
  • Topping:
    • 1/2 cup caramel sauce (store-bought or homemade)
    • 1/2 cup roasted peanuts, chopped
    • Pinch of sea salt (optional)

Instructions

  1. Make the Crust: In a bowl, mix graham cracker crumbs, brown sugar, and melted butter. Press firmly into the bottoms of a lined muffin pan. Chill for 10 minutes.
  2. Whip the Filling: Beat cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth and fluffy. Fold in cold whipped cream to keep it light and creamy.
  3. Fill and Chill: Spoon the mixture over the crusts and smooth the tops. Refrigerate for at least 2 hours (or freeze for quicker setup).
  4. Top with Caramel Magic: Drizzle with warm caramel sauce and sprinkle chopped peanuts on top. Add a pinch of sea salt if desired.
  5. Serve & Impress: Carefully remove each mini from the muffin tin before serving.

Notes

  • For a firmer texture, freeze for 30 minutes before serving.
  • Use homemade caramel for a richer flavor.
  • Store in an airtight container in the refrigerator for up to 3 days.
