1 cup unsweetened almond milk (or milk of choice)
½ cup plain Greek yogurt
1 tbsp chia seeds
1 tsp vanilla extract
½ tsp ground cinnamon
1 tbsp maple syrup or honey (optional)
1 ripe peach, diced (plus extra for topping)
1–2 tbsp chopped pecans or walnuts
Pinch of salt
Instructions
In a mason jar or bowl, stir together oats, almond milk, Greek yogurt, chia seeds, vanilla extract, cinnamon, maple syrup or honey, and a pinch of salt.
Fold in the diced peach.
Cover and refrigerate for at least 6 hours or overnight.
Before serving, stir well and top with extra peach slices and chopped pecans or walnuts.
Enjoy cold or microwave for 30–60 seconds for a warm version.
