Ingredients

  • 2 large sweet onions
  • 2 tbsp butter (salted)
  • 1 tsp Cajun seasoning
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 tsp dried parsley (or fresh)
  • 2 cups chicken broth (or veggie broth)
  • Salt & pepper to taste
  • Optional: crusty bread for dipping

Instructions

  1. Peel onions and slice a cross hatch on top, about halfway down.
  2. Place 1 tbsp butter over each onion and sprinkle with Cajun seasoning, garlic powder, paprika, and pepper.
  3. Place onions in a pot or deep pan, pour broth around them (not over), cover, and simmer on medium-low for 45–60 minutes until fork-tender.
  4. For extra flavor, broil the onions uncovered for 3–5 mins until golden on top.
  5. Spoon the buttery broth over the onions, sprinkle parsley, and serve hot with bread for dipping.
