Healthy no-bake peanut butter oat cups with a rich chocolate topping. Perfect for a quick snack or dessert.

Ingredients

  • 2 cups rolled oats
  • 1/2 cup natural peanut butter
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil
  • Extra peanut butter for swirling
  • Chopped peanuts or almonds
  • Flaky sea salt
  • Mini chocolate chips

Instructions

  1. Mix oats, peanut butter, honey, vanilla, and salt in a bowl until sticky.
  2. Press the mixture into lined muffin tin cavities to form cups.
  3. Melt chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
  4. Spoon melted chocolate into each oat cup and swirl peanut butter on top.
  5. Sprinkle with nuts, mini chocolate chips, and sea salt. Chill for 30–45 minutes until firm.

Notes

  • Use natural peanut butter for best results.
  • Store in the refrigerator for up to a week.
  • Substitute maple syrup for honey if preferred.
