  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1 cup julienned sun-dried tomatoes (in oil, drained)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes (optional)
  • Salt & black pepper to taste
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon paprika
  • 1 teaspoon dried basil or a handful of fresh chopped basil
  • Fresh basil & extra parmesan for garnish

Instructions

  1. In a hot skillet, heat olive oil and sauté diced onion and garlic until fragrant and golden.
  2. Place chicken breasts in the crockpot and top with sautéed onion and garlic, sun-dried tomatoes, Italian seasoning, red pepper flakes, paprika, salt, and pepper.
  3. Pour in chicken broth, cover, and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  4. Remove chicken, shred it using forks, then return to the crockpot.
  5. Stir in heavy cream and grated parmesan cheese.
  6. Simmer for an additional 20-30 minutes.
  7. Garnish with fresh basil and extra parmesan before serving.

  • For a spicier version, increase the amount of red pepper flakes.
  • Use fresh basil for more vibrant flavor.
  • Serve with crusty bread for a complete meal.
