1.5 lbs boneless, skinless chicken breasts
1 tablespoon olive oil
1 small yellow onion, finely diced
4 cloves garlic, minced
1 cup julienned sun-dried tomatoes (in oil, drained)
1 tablespoon Italian seasoning
1 teaspoon red pepper flakes (optional)
Salt & black pepper to taste
4 cups chicken broth
1 cup heavy cream
1/2 cup grated parmesan cheese
1/2 teaspoon paprika
1 teaspoon dried basil or a handful of fresh chopped basil
Fresh basil & extra parmesan for garnish
Instructions
In a hot skillet, heat olive oil and sauté diced onion and garlic until fragrant and golden.
Place chicken breasts in the crockpot and top with sautéed onion and garlic, sun-dried tomatoes, Italian seasoning, red pepper flakes, paprika, salt, and pepper.
Pour in chicken broth, cover, and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
Remove chicken, shred it using forks, then return to the crockpot.
Stir in heavy cream and grated parmesan cheese.
Simmer for an additional 20-30 minutes.
Garnish with fresh basil and extra parmesan before serving.
Notes
For a spicier version, increase the amount of red pepper flakes.
