12 oz bowtie (farfalle) pasta
1 lb chicken breast, cut into bite-sized pieces
2 tbsp olive oil
1 tbsp Italian seasoning
3 cloves garlic, minced
1 cup cherry tomatoes
2 cups fresh spinach
1 cup heavy cream
½ cup grated Parmesan cheese
Salt & pepper to taste
Fresh basil, sliced (for garnish)
Instructions
Boil bowtie pasta until al dente, then drain and set aside.
In a large skillet, heat olive oil and add chicken. Season with Italian herbs, salt, and pepper. Cook until golden and cooked through.
Add garlic and cherry tomatoes to the skillet and sauté until tomatoes start to blister.
Stir in spinach and let it wilt slightly. Pour in the cream, then add Parmesan cheese and stir until a creamy sauce forms.
Add cooked pasta to the skillet and gently toss to combine. Garnish with fresh basil and extra cheese if desired. Serve immediately.
