Ingredients

  • 2 large sweet potatoes
  • 1 lb ground beef (lean)
  • 1 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tsp smoked paprika
  • ½ tsp chili flakes (plus more for garnish)
  • 2 tbsp tomato paste
  • 2 tbsp honey
  • Salt & pepper to taste
  • ½ cup ricotta or cottage cheese
  • 1 ripe avocado (sliced)
  • ½ cucumber (diced, optional)
  • Chopped green onions (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Slice potatoes in half lengthwise and roast cut-side down for 30–35 minutes until tender.
  2. In a skillet, heat olive oil. Add garlic, then ground beef, and cook until browned. Stir in tomato paste, paprika, chili flakes, and honey. Season to taste.
  3. Once sweet potatoes are soft, scoop out a bit to make space. Pile in the beef mixture.
  4. Dollop with ricotta, then layer on avocado, cucumber, and green onions.
  5. Finish with a drizzle of extra honey and a sprinkle of chili flakes.

Notes

  • Adjust chili flakes to your preferred spice level.
  • Cucumber adds freshness but is optional.
  • Ricotta can be substituted with cottage cheese.
