A sweet and savory one-pan dinner featuring roasted sweet potatoes, smoky sausage, and a sticky honey garlic glaze, perfect for easy weeknight meals.

Ingredients

  • 4 cups sweet potatoes, peeled & cubed
  • 12 oz smoked sausage (kielbasa or andouille), sliced
  • 1 small onion, sliced
  • 3 tbsp olive oil
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt & black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine sweet potato cubes, olive oil, garlic, paprika, thyme, salt, and pepper. Mix well to coat.
  2. In a skillet over medium heat, sear the sausage slices until browned and crispy.
  3. Preheat oven to 425°F (220°C). Spread seasoned sweet potatoes and onions on a sheet pan. Roast for 20 minutes until almost tender.
  4. Add the browned sausage and drizzle everything with honey. Toss gently, then roast for another 10 minutes.
  5. Remove from oven, sprinkle chopped parsley over the top, and serve warm.

Notes

  • Use pre-cooked sausage for faster prep.
  • Swap sweet potatoes with butternut squash for variety.
  • Leftovers store well for up to 3 days in the fridge.
