- 14 oz smoked sausage or kielbasa, sliced into coins
- 2 cups broccoli florets
- 2 cups diced butternut squash (or sweet potatoes)
- 1 small red onion, roughly chopped
- 2 tbsp olive oil
- 3 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- Salt & pepper, to taste
- Optional: chopped parsley or red pepper flakes for garnish
- Preheat oven to 400°F (200°C). Toss broccoli, butternut squash, and red onion on a large sheet pan.
- In a small bowl, mix olive oil, honey, minced garlic, and soy sauce. Pour over the veggies and toss.
- Scatter sliced sausage over the veggies.
- Bake for 25–30 minutes, flipping once halfway through, until sausage is browned and veggies are tender.
- Garnish with chopped parsley or red pepper flakes and serve hot.
Notes
- Use any preferred sausage variety.
- Swap butternut squash with sweet potatoes if desired.
- Adjust honey and soy sauce to taste.
