A super easy weeknight dinner loaded with bold flavors!

Ingredients

  • 1 lb ground turkey
  • 3 medium potatoes, peeled and diced
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, chopped (optional)
  • ½ cup diced red bell pepper or tomato
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp chili flakes (optional)
  • Salt & pepper to taste
  • Fresh parsley or cilantro for garnish
  • Optional: shredded cheese for topping

Instructions

  1. Heat olive oil in a large skillet. Cook onions, garlic, and carrots until soft.
  2. Add ground turkey and cook until no longer pink. Season with smoked paprika, cumin, salt, pepper, and chili flakes.
  3. Stir in diced potatoes and peppers. Add ½ cup water, cover, and let simmer for 15–20 minutes, stirring occasionally, until potatoes are fork-tender.
  4. Taste and adjust seasoning. Garnish with fresh herbs and (optional) a sprinkle of shredded cheese.
  5. Serve alone or over rice.

Notes

  • Optional ingredients can be omitted or substituted.
  • Reheats well for leftovers.
