- 1 lb ground turkey
- 3 medium potatoes, peeled and diced
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 carrot, chopped (optional)
- ½ cup diced red bell pepper or tomato
- 1 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp cumin
- ½ tsp chili flakes (optional)
- Salt & pepper to taste
- Fresh parsley or cilantro for garnish
- Optional: shredded cheese for topping
- Heat olive oil in a large skillet. Cook onions, garlic, and carrots until soft.
- Add ground turkey and cook until no longer pink. Season with smoked paprika, cumin, salt, pepper, and chili flakes.
- Stir in diced potatoes and peppers. Add ½ cup water, cover, and let simmer for 15–20 minutes, stirring occasionally, until potatoes are fork-tender.
- Taste and adjust seasoning. Garnish with fresh herbs and (optional) a sprinkle of shredded cheese.
- Serve alone or over rice.
