2 medium apples (Honeycrisp or Gala), peeled & diced
1 cup gluten-free all-purpose flour (with xanthan gum)
2 tbsp brown sugar
1 tsp baking powder
½ tsp cinnamon
1 egg
¼ cup milk (dairy or plant-based)
1 tsp vanilla extract
Pinch of salt
Olive oil spray or cooking spray
2 tbsp powdered sugar (for dusting)
Optional: cinnamon-sugar mix or maple glaze
Instructions
In a bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt.
In a separate bowl, beat the egg, milk, and vanilla extract. Add to the dry mix and stir until just combined. The batter should be thick and scoopable.
Fold in the diced apples gently to distribute evenly throughout the batter.
Preheat air fryer to 375°F. Scoop heaping spoonfuls of batter onto a greased parchment round or directly into the greased basket.
Air fry for 8–10 minutes, flipping halfway through, until fritters are puffed and golden brown.
Dust with powdered sugar or drizzle with maple glaze. Serve warm and enjoy.
