A fun twist on classic comfort food for every celebration! These Funfetti Cornbread Muffins combine the sweetness of cornbread with colorful sprinkles for a festive treat.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/3 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/3 cup melted butter (or oil)
  • 1/2 cup rainbow sprinkles (jimmies style)
  • Optional: 1 tsp vanilla extract for a hint of sweetness

Instructions

  1. Mix the Dry Stuff: In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  2. Whisk the Wet Ingredients: In a separate bowl, mix buttermilk, eggs, melted butter, and vanilla extract.
  3. Combine & Add Color: Gently stir wet ingredients into the dry. Fold in the rainbow sprinkles.
  4. Fill the Muffin Tins: Line a muffin tin with cupcake liners and fill each one 3/4 full. Add extra sprinkles on top.
  5. Bake & Enjoy: Bake at 375°F (190°C) for 15–18 minutes, until golden and springy to the touch. Let cool before serving.

Notes

  • Use jimmies-style sprinkles for best results.
  • Do not overmix the batter to keep muffins fluffy.
  • Add extra sprinkles on top for a festive look.
