1 cup yellow cornmeal
1 cup all-purpose flour
1/3 cup sugar
1 tbsp baking powder
1/2 tsp salt
1 cup buttermilk
2 large eggs
1/3 cup melted butter (or oil)
1/2 cup rainbow sprinkles (jimmies style)
Optional: 1 tsp vanilla extract for a hint of sweetness
Instructions
Mix the Dry Stuff: In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
Whisk the Wet Ingredients: In a separate bowl, mix buttermilk, eggs, melted butter, and vanilla extract.
Combine & Add Color: Gently stir wet ingredients into the dry. Fold in the rainbow sprinkles.
Fill the Muffin Tins: Line a muffin tin with cupcake liners and fill each one 3/4 full. Add extra sprinkles on top.
Bake & Enjoy: Bake at 375°F (190°C) for 15–18 minutes, until golden and springy to the touch. Let cool before serving.
