A bright and flavorful lemon fish soup with Mediterranean influences, perfect for a quick and healthy family dinner.

  • 1 ½ lbs white fish fillets (cod, halibut, or tilapia), cut into chunks
  • 4 cups seafood or chicken broth
  • 1 cup water
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 small carrot, diced
  • 1 celery stalk, diced
  • ½ teaspoon red pepper flakes
  • 1 teaspoon paprika
  • ½ teaspoon turmeric
  • Juice of 1 large lemon (about 3 tablespoons)
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste
  • Optional: 2 tablespoons heavy cream

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery. Sauté until soft.
  2. Stir in paprika, turmeric, and red pepper flakes.
  3. Pour in broth and water, bring to a boil, then simmer for 10 minutes.
  4. Add fish chunks and cook for 5–7 minutes until opaque and flaky.
  5. Stir in lemon juice and zest. Adjust salt and pepper. Add heavy cream if desired.
  6. Garnish with parsley and serve hot.

Notes

  • Use fresh lemon juice for the best flavor.
  • Do not overcook the fish to keep it tender.
  • Serve with crusty bread for dipping.
