2 cans (14.75 oz) salmon, drained and flaked
1/2 cup finely chopped onion
1/4 cup finely chopped parsley
1 egg
1/2 cup mayonnaise
1 tsp Dijon mustard
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and pepper, to taste
1 cup panko breadcrumbs (plus more for coating)
Vegetable oil, for frying
Optional: lemon wedges & tartar sauce for serving
Instructions
Mix salmon, onion, parsley, egg, mayo, mustard, and seasonings in a bowl. Add panko and mix until texture holds together.
Shape mixture into 8-10 patties. Roll each in additional panko to coat.
Chill croquettes for 20 minutes to help them stay firm.
Heat oil in skillet over medium heat. Fry croquettes 3-4 minutes per side until golden.
Serve with tartar sauce or dip and lemon wedges.
Notes
Chilling helps croquettes hold shape during frying.
