Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon red pepper flakes (optional)
  • Salt & black pepper to taste
  • 1 tablespoon butter
  • Chopped green onions (for garnish)
  • Toasted bread for dipping (optional)

Instructions

  1. In a hot skillet with olive oil, cook shrimp 1–2 minutes per side until golden.
  2. Remove shrimp and in the same skillet, sauté garlic in butter, then add tomatoes and cook until blistered.
  3. Stir in cream, Parmesan, and red pepper flakes. Let it simmer until thickened.
  4. Add fresh spinach and stir until wilted.
  5. Return shrimp to the pan, spoon over the sauce, and top with green onions.

Notes

  • Serve with crusty bread for dipping.
  • Adjust red pepper flakes for desired spice level.
