  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 2 cups heavy cream
  • 1½ cups shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme (optional)
  • Fresh chopped chives (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Thinly slice the potatoes evenly.
  2. In a saucepan, melt butter and sauté garlic until fragrant. Add heavy cream, salt, pepper, and thyme. Warm gently—don’t boil.
  3. In a greased baking dish, layer potatoes, drizzle cream mixture, and sprinkle mozzarella and cheddar. Repeat layers, finishing with Parmesan on top.
  4. Cover with foil and bake for 40 minutes. Remove foil and bake another 20–25 minutes until golden brown and bubbly.
  5. Let the pie rest for 10–15 minutes before slicing. Garnish with fresh chives and serve warm.
