4 cups shredded green cabbage
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, canned, or thawed frozen)
1 large tomato, diced
1/4 red onion, finely chopped
1/2 cup chopped cilantro
1 jalapeño, thinly sliced (optional)
1 1/2 cups crushed Fritos corn chips
1/2 cup mayo or plain Greek yogurt
2 tbsp sour cream
1 tbsp lime juice
1 tsp chili powder
Salt & pepper to taste
Instructions
In a small bowl, mix together mayo (or Greek yogurt), sour cream, lime juice, chili powder, salt, and pepper until smooth to create the dressing.
In a large mixing bowl, combine shredded cabbage, black beans, corn, diced tomato, chopped red onion, and chopped cilantro.
Add sliced jalapeños if desired for extra heat.
Pour the creamy dressing over the salad mixture and toss until evenly coated.
Right before serving, fold in the crushed Fritos to maintain their crunch.
