A hearty and healthy Classic Lentil Soup that’s perfect for cozy family dinners. This one-pot, plant-based dish is easy to make, packed with flavor, and full of comforting ingredients.

Ingredients

  • 1 tbsp olive oil
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 2 large carrots, sliced
  • 2 celery stalks, diced
  • 1 cup dried brown or green lentils, rinsed
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • Salt to taste
  • 1 tbsp tomato paste
  • 6 cups vegetable broth (or water with bouillon)
  • 1 bay leaf
  • Fresh parsley (optional, for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until softened, about 5–7 minutes.
  2. Stir in minced garlic, cumin, smoked paprika, and black pepper. Sauté for 1 more minute.
  3. Add tomato paste and cook for 1–2 minutes, stirring well. Toss in rinsed lentils and bay leaf.
  4. Add broth, stir, and bring to a boil. Lower the heat and let it simmer for 30–35 minutes, until lentils are tender.
  5. Remove bay leaf. Taste and adjust salt. Serve hot, optionally topped with chopped fresh parsley.

Notes

  • Use green or brown lentils for best texture; red lentils will cook faster and become mushier.
  • For extra flavor, add a splash of lemon juice before serving.
  • This soup stores well and tastes even better the next day.
  • Can be blended partially for a creamier texture.
