Ingredients

  • 1 lb large shrimp (peeled & deveined)
  • 2 medium zucchinis (spiralized into zoodles)
  • 2 tbsp olive oil
  • Juice of 1 lime
  • Juice of 1 orange
  • 3 garlic cloves (minced)
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes (optional)
  • Salt & pepper to taste
  • 2 tbsp chopped fresh cilantro
  • Lime wedges (for serving)

Instructions

  1. Marinate the shrimp with olive oil, lime juice, orange juice, garlic, paprika, chili flakes, salt, and pepper for 15–20 minutes.
  2. Spiralize zucchini into zoodles and pat them dry.
  3. Grill shrimp for 2–3 minutes per side until pink and slightly charred.
  4. Sauté zoodles for 1–2 minutes in the same pan.
  5. Plate zoodles, top with shrimp, drizzle with pan sauce, and garnish with cilantro and lime wedges.

Notes

  • Patting zoodles dry prevents sogginess.
  • Adjust chili flakes for preferred spice level.
