  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 ½ cups shredded zucchini (no need to peel)
  • ½ cup sour cream or Greek yogurt
  • ½ cup chopped pecans or walnuts (optional)
  • For the streusel topping:
  • ½ cup brown sugar
  • ¼ cup flour
  • 1 tsp cinnamon
  • 3 tbsp cold butter, cubed
  • ¼ cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a bundt or 9×13 inch pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla extract, mixing until well combined.
  4. Stir in the sour cream and shredded zucchini until fully incorporated.
  5. Gently fold in the dry mixture and optional nuts until just combined.
  6. Pour the batter into the prepared pan and spread evenly.
  7. In a small bowl, mix streusel ingredients (brown sugar, flour, cinnamon, and cold butter) until crumbly. Add nuts if using. Sprinkle over the batter.
  8. Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool before slicing and serving.
