6 large flour tortillas
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup whipped topping (Cool Whip or homemade)
1/2 cup brown sugar
1 tbsp cinnamon
1/4 cup granulated sugar
1/4 cup butter, melted
Caramel sauce (for drizzle)
Powdered sugar (for dusting)
Instructions
Make the Cheesecake Filling: Beat softened cream cheese, powdered sugar, and vanilla extract until creamy. Fold in the whipped topping until smooth.
Spread & Roll: Lay out a tortilla, spread a generous amount of the cheesecake filling in the center, then roll it up tight like a burrito.
Cinnamon Sugar Coating: Mix brown sugar, cinnamon, and granulated sugar in a bowl. Brush each chimichanga with melted butter, then roll it through the cinnamon sugar mix.
Crisp to Perfection: Lightly pan-fry each roll for 2–3 minutes per side until crispy and golden, or bake at 400°F (200°C) for 10 minutes.
Top & Serve: Drizzle with caramel sauce and dust with powdered sugar. Serve warm.
Notes
Use softened cream cheese for a smoother filling.
Roll the tortillas tightly to prevent filling from leaking.
