  • 1 ½ cups semi-sweet chocolate chips
  • ½ tsp pure vanilla extract
  • ¼ tsp sea salt
  • ¼ cup powdered sugar
  • ½ cup chopped roasted almonds (or hazelnuts)
  • 2 tbsp unsweetened cocoa powder (optional, for extra richness)

Instructions

  1. Melt the chocolate chips in a heatproof bowl using a microwave or double boiler until smooth.
  2. In a medium bowl, mix together ricotta, powdered sugar, vanilla extract, and sea salt until smooth.
  3. Stir the melted chocolate into the ricotta mixture until fully combined. Chill in the refrigerator for 1 hour to firm.
  4. Once chilled, scoop and roll the mixture into bite-sized truffles.
  5. Roll each truffle in chopped almonds or cocoa powder. Store in the fridge and serve chilled.
