A healthy no-bake dessert featuring chocolate and peanut butter chia cups, perfect for a high-protein snack or make-ahead treat.

Ingredients

  • 1 cup chia seeds
  • 2 cups almond milk (or milk of choice)
  • ⅓ cup creamy peanut butter
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ½ cup dark chocolate chips
  • 1 tablespoon coconut oil
  • Extra chopped peanuts (for crunch)
  • Flaky sea salt (optional)

Instructions

  1. Mix chia seeds, almond milk, peanut butter, maple syrup, vanilla, and salt in a bowl. Let sit 5 minutes, then whisk again.
  2. Cover and refrigerate for 2–3 hours (or overnight) until thick.
  3. Spoon the mixture into silicone muffin molds or small ramekins. Freeze for 1–2 hours until firm.
  4. Melt dark chocolate chips with coconut oil. Pour over each frozen chia cup and sprinkle with chopped peanuts and sea salt.
  5. Return to freezer for 15–20 minutes until chocolate sets. Let sit at room temperature briefly before serving.
