A mouthwatering Chicken Avocado Melt sandwich featuring juicy grilled chicken, creamy mashed avocado, melted cheeses, and fresh veggies on crispy sourdough bread. A quick and comforting lunch or dinner option.

  • 2 slices sourdough or artisan bread
  • 1 cooked chicken breast (grilled or roasted), sliced
  • 1 ripe avocado, mashed
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 1 small tomato, thinly sliced
  • 12 tbsp finely chopped red onion
  • 1 tbsp fresh chopped cilantro (optional)
  • 1 tbsp butter (for grilling)
  • Salt and pepper, to taste
  • Optional: dash of lime juice in mashed avocado

Instructions

  1. In a bowl, mash the ripe avocado with a fork. Add a dash of lime juice, a pinch of salt, and chopped cilantro (if using).
  2. Lay out the bread slices. Spread the mashed avocado on one side. Layer with sliced chicken, cheddar and Monterey Jack cheeses, red onion, and tomato slices.
  3. Top with the second slice of bread and press down gently.
  4. Heat a skillet over medium heat. Melt the butter and place the sandwich in the pan. Grill for 3–4 minutes on each side until golden brown and cheese is melted.
  5. Remove from the skillet, slice in half, and serve hot while the cheese is gooey and flavors are fresh.

  • Use rotisserie chicken for a quicker option.
  • Swap in whole wheat or multigrain bread for added fiber.
