A spicy, cheesy Cajun Shrimp Grilled Cheese sandwich that’s packed with bold Southern flavors. This comforting melt combines seasoned shrimp, gooey cheese, and crispy bread for the ultimate seafood sandwich indulgence.

  • 1/2 lb large shrimp, peeled & deveined
  • 4 slices of thick sourdough or brioche bread
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 2 tbsp unsalted butter (softened)
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 green onion, sliced (for garnish)
  • Optional: hot sauce or aioli for dipping

Instructions

  1. Season shrimp with Cajun seasoning, garlic powder, and smoked paprika.
  2. Heat olive oil in a skillet over medium-high heat. Sear the shrimp for 2-3 minutes per side until cooked through. Set aside.
  3. Spread softened butter on one side of each bread slice.
  4. On the unbuttered side of two bread slices, layer half the cheese, add cooked shrimp, and top with remaining cheese. Close with the other bread slices, buttered side out.
  5. Heat a clean skillet over medium heat and cook sandwiches until golden brown on both sides and cheese is melted, about 3-4 minutes per side.
  6. Slice sandwiches in half, garnish with green onions, and serve hot with dipping sauce if desired.

Notes

  • Use Monterey Jack for extra melt and flavor.
  • Adjust Cajun seasoning for your spice level preference.
  • Serve with aioli or hot sauce for added zing.
  • Fresh shrimp works best, but thawed frozen shrimp can be used as well.
