Bruschetta Chicken Pasta is a quick and flavorful Italian-inspired dish combining seared chicken, blistered cherry tomatoes, garlic, and balsamic glaze with bowtie pasta, Parmesan, and fresh basil. Perfect for a cozy weeknight dinner or an impressive meal for guests.

Ingredients

  • 12 oz bowtie (farfalle) pasta
  • 2 chicken breasts, sliced thin
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 2 cups cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 2 tbsp balsamic glaze (or vinegar)
  • 1/4 cup freshly chopped basil
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup burrata or mozzarella (optional)
  • Salt & pepper to taste

Instructions

  1. Boil pasta in salted water until al dente. Drain and set aside.
  2. Season sliced chicken with Italian seasoning, salt, and pepper. Cook in a hot skillet with olive oil until golden and cooked through.
  3. In the same skillet, sauté garlic and cherry tomatoes until blistered. Add balsamic glaze and stir to combine.
  4. Return cooked pasta and chicken to the skillet. Toss everything together and stir in Parmesan cheese and chopped basil.
  5. Serve the pasta topped with burrata or mozzarella, extra basil, and a drizzle of olive oil.
