  • 1/2 cup (1 stick) unsalted butter
  • 1 1/4 cups semi-sweet chocolate chips
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup light brown sugar
  • 1 cup powdered sugar
  • 1/4 cup all-purpose flour (heat-treated for safety)
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • Pinch of salt
  • Mini chocolate chips (optional)

Instructions

  1. Melt butter and chocolate chips together until smooth. Whisk in both sugars, eggs, and vanilla.
  2. In a bowl, whisk flour, cocoa powder, baking powder, and salt. Mix into the chocolate base until thick.
  3. Drop heaping tablespoons of batter onto parchment-lined baking sheets. Bake at 350°F for 10–12 mins. Let cool completely.
  4. Beat butter, brown sugar, powdered sugar, vanilla, and flour until fluffy. Add milk to get a spreadable consistency. Fold in mini chips if desired.
  5. Spread a generous layer of buttercream between two cooled brownie cookies. Press gently. Store in fridge or at room temperature.

Notes

  • For a firmer bite, store in the fridge.
  • For ultra-soft cookies, keep at room temperature.
  • Heat-treat flour by microwaving for 1 minute to ensure safety.
