  • 1 cup cottage cheese (smooth style preferred)
  • ¼ cup all-purpose flour (or almond flour for low-carb)
  • ¼ tsp cream of tartar
  • 2 tbsp sugar or honey (optional for sweetness)
  • 1 cup fresh blueberries
  • ½ tsp vanilla extract
  • Whipped cream or Greek yogurt (for topping)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Whip the egg whites with cream of tartar until stiff peaks form.
  2. Mix egg yolks, cottage cheese, flour, vanilla, and sweetener until smooth.
  3. Gently fold whipped egg whites into the yolk mix in batches.
  4. Pour batter into a parchment-lined springform pan and bake at 325°F (165°C) for 30–35 minutes.
  5. Let cool slightly, then top with whipped cream or Greek yogurt, fresh blueberries, and powdered sugar.
