Ingredients

- 2 cooked beets, cubed
- 1½ cups canned chickpeas, drained and rinsed
- ½ cup feta cheese, cubed or crumbled
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1 garlic clove, minced
- 2 tbsp fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- In a large bowl, combine chickpeas, beets, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper to make the dressing.
- Pour the dressing over the salad mixture and toss gently to coat.
- Let the salad sit for 10–15 minutes to allow the flavors to meld.
- Sprinkle with fresh parsley before serving.
- Serve chilled or at room temperature.
