3 ripe but firm pears (Bosc or Anjou work best)
4 oz goat cheese, softened
1/4 cup dried cranberries
2 tbsp chopped walnuts or pecans (optional)
2 tbsp honey (plus extra for drizzling)
Fresh thyme sprigs (for garnish)
Pinch of cinnamon
1 tbsp olive oil or melted butter
Instructions
Preheat oven to 375°F. Slice pears in half lengthwise and scoop out the core to make a well. Drizzle with olive oil and sprinkle with cinnamon.
Place pears cut side up in a baking dish. Roast for 20–25 minutes until tender and slightly caramelized.
While the pears bake, mix goat cheese with a drizzle of honey and a tiny pinch of salt.
Once pears are done, spoon goat cheese mixture into each pear center. Top with cranberries and chopped nuts. Return to oven under broiler for 2–3 minutes until warm and lightly golden on top.
Finish with a generous drizzle of honey and garnish with fresh thyme sprigs. Serve warm.
