No-bake cheesecake truffles with a rich Baileys Irish Cream flavor, dipped in white chocolate and drizzled with dark chocolate for a decadent treat.

Ingredients

  • 8 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1/4 cup Baileys Irish Cream (or flavored creamer for non-alcoholic)
  • 1 cup crushed graham crackers or cookies
  • 1/2 cup mini chocolate chips
  • 12 oz white chocolate chips (for coating)
  • 1/2 cup dark chocolate (melted, for drizzle)
  • Extra cookie crumbs (for topping)

Instructions

  1. Beat cream cheese, powdered sugar, and Baileys until smooth. Stir in crushed cookies and chocolate chips.
  2. Scoop and roll the mixture into 1-inch balls. Freeze for 30 minutes.
  3. Melt white chocolate in the microwave, stirring every 20 seconds.
  4. Dip each chilled ball into white chocolate and place back on a tray. Chill until firm.
  5. Drizzle with melted dark chocolate and sprinkle crushed cookies on top.
