8 chicken drumsticks or thighs (bone-in, skin-on)
1 cup buttermilk
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
Salt & pepper to taste
1½ cups all-purpose flour
½ cup cornstarch
1 tsp smoked paprika
½ tsp cayenne pepper
1 tsp dried oregano
½ tsp white pepper
Salt & black pepper to taste
Olive oil spray (or cooking spray)
Instructions
In a bowl, mix chicken with buttermilk, paprika, garlic powder, onion powder, salt, and pepper. Let it marinate for at least 2 hours or overnight.
In another bowl, mix the flour, cornstarch, smoked paprika, cayenne pepper, dried oregano, white pepper, salt, and black pepper.
Remove the chicken from the marinade without wiping it off. Dredge in the flour mixture. For extra crispiness, dip it back into the marinade and dredge again in the flour mix.
Preheat the air fryer to 380°F (193°C). Lightly spray the basket with oil. Arrange chicken in a single layer and spray the tops with oil. Air fry for 25–28 minutes, flipping halfway and re-spraying with oil.
Let the chicken rest for 5 minutes before serving to retain juices and keep the coating crispy.

Marinating overnight gives the best flavor and juiciness.
Double dredging ensures an ultra-crispy coating.
Don’t overcrowd the air fryer basket to allow even cooking.
Use a meat thermometer to ensure chicken reaches 165°F internally.
